It’s Officially Soup Season

The other day, with winter finally waking up here in Memphis, I made soup. I got the foundation of the recipe from a bag of Kale sold at Costco. I never wrote the recipe down because anytime I wanted to make it was on the bag. Unfortunately one day the bag did not have the recipe on it. Luckily with all my pictures I was able to email the supplier and they provided me the recipe and a link to other great Kale recipes I still don’t feel like this was the same as the one on the bag but it is close enough or maybe it’s in my mind. Anyway, it’s a great recipe. I added smoked sausage (pork) but feel free to add any protein (chicken, turkey, beef, …) you like. Also, the same can be done for the beans. The recipe calls for cannellini beans, but I used garbanzo and kidney beans this time. The short cooking time requires the use of pre-cooked beans. This can be out of a can or you will need to cook your beans ahead of time if using dry. Also, you can adjust the ingredients and used more or less Chicken broth to your desired soup consistency level. Some people like very watery soup to slurp or soak up with be read and some like less watery and more souo contents. Hey it’s your choice.
